Easy Vegan Chocolate Chip Muffins

These muffins are the perfect way to start your day or end your night. Each bite is full of chocolate chips!

Chocolate Chip Muffins

Most vegan recipes include banana for moisture and an egg substitute. While that works great, banana is a strong flavor that not everyone wants in a traditional chocolate chip muffin. However my lemon blueberry muffin recipe does use banana if you are looking for that!

In this recipe I use a combination of vegan yogurt and unsweetened applesauce to bind the muffins and give them an ideal texture.

What ingredients do I need?

Only 10 ingredients are required to put together these delicious vegan banana free muffins!

  • Refined coconut oil: We use refined because it is flavorless, but you can use unrefined if you want a little coconut flavor.

  • Thick vegan yogurt (I like Kite hill plain unsweetened): Because nobody wants a dry muffin.

  • Unsweetened applesauce: Acts to bind the batter and bring moisture

  • Vanilla extract

  • Vegan buttermilk (plant milk combined with vinegar)

  • White whole wheat flour

  • White granulated sugar

  • Pure maple syrup: A little more sweetener never hurt anyone!

  • Baking powder: Allows the muffins to rise.

  • Vegan chocolate chips: I used regular sized chips, but you can use mini if you have them!

Can I make any ingredient substitutions?

Refined coconut oil can be swapped for unrefined coconut oil, or a neutral oil like vegetable. White whole wheat flour can be changed to all purpose flour. The maple syrup can be subbed with another liquid sweetener like agave nectar.
