Matcha Baked Oats

Are you team matcha or coffee? Maybe both? If I am at home, I prefer making matcha but I do like getting fun coffee’s when I am out and about!

This recipe is single serve, easy to make, hard to disappoint, and vegan.

Fun fact about matcha

Matcha is a slow release of energy. It will provide energy over a longer period of time and you won’t get the instant boost like you do from coffee.

What brand of matcha should you use?

A ceremonial grade matcha! I use the brand Jade leaf. I have heard good reviews from Pique matcha and Golde matcha but have not tried.

Matcha Baked Oatmeal


  • 1/3 cup oat flour

  • 1 scoop vanilla protein powder (12.5g)

  • 1-2 tbsp cane sugar

  • 1/2 of a small banana mashed

  • 1/4 tsp matcha powder

  • pinch green spirulina (for color, completely optional)

  • 1/2 tsp baking powder

  • 1/3 cup plant milk

  • powdered sugar, for topping


  1. preheat oven to 375°F

  2. mix all ingredients in a bowl

  3. transfer batter to a greased oven safe dish

  4. bake for 25 minutes

  5. top with powdered sugar
