Salted Chocolate Pretzel Overnight Oats

The perfect combination of sweet and salty, with a layer of chocolate ganache.


The back story

The other day I was trying to come up with varying oatmeal recipes. I post a lot of baked oat recipes and I love them but lets be honest, not everyone has the time to make them every morning. I really love overnight oats because they are time saving, easy to make, and very customizable!

Why you should make these oats

Sweet and salty is in my opinion an underrated combination. There is something about it that keeps me coming back for more. Salty pretzels + chocolate, I mean what else could you possibly want? With each bite, you taste the pretzels, silky chocolate ganache, and creamy oatmeal. It is simply delicious.



Salted Chocolate Pretzel Overnight Oats


INGREDIENTS

In a bowl combine:

  • 1/2 cup oatmeal

  • 1 scoop chocolate protein powder (12.5 grams)

  • 1 tbsp maple syrup (optional!)

  • dash of vanilla extract

  • 1/2 cup plant milk (more or less depending how thick/thin you want the oats)

  • 2 tbsp vegan vanilla yogurt

Chocolate Ganache

  • 1 tbsp cocoa powder

  • 2 tbsp water

  • 1-2 tsp maple syrup (can add more sweetener as desired)

Topping

  • crushed pretzels, sea salt, and sprinkles

DIRECTIONS

  1. combine all oatmeal ingredients in a bowl

  2. place in fridge 3 hours or overnight

  3. make ganache by adding all ingredients together (will have to stir for awhile)

  4. add toppings
