What is a galette?

A galette is a free form, round flat cake made from bread or pastry dough. They can be sweet or savory. The good thing about galettes is that they do not need to look perfect. Actually, I would argue that they look better when they are more rustic!

How do you make the crust?

First you will need cold vegan butter. It cannot be warmed or it messes with the dough consistency/formation. Then we add flour, salt, and a touch of sugar. Pulse all this together in a food processor until a shaggy loose dough starts to come together.

Next add ice cold water and cold lemon juice. The lemon juice prevents some of the gluten formation which helps you form the crust you want. 

After you have a dough that comes together if you squeeze it between two fingers, flip it onto a lightly floured surface. Form a disc shape with the dough and wrap it in plastic wrap and place it in the fridge for 30 minutes. Plastic wrap prevents the dough from drying out. 

Next remove the dough from the fridge and make the raspberry filling. This gives the dough time to soften up (makes it easier to work with). Roll the dough into a 12 in circle, add the filling and bake. That’s it! Pretty simple and tastes great. If you are running low on time you can also use a store bought pie crust.

Do you have to use raspberries?

You can use any type of berry such as blueberries or strawberries in this galette recipe. Just make sure you cut the strawberries up!

How does the crust brown with no egg wash?

Most recipes use egg to get the nice golden brown color. However, this is a vegan recipe. I use plant milk to help brown the crust. You can also brush on vegan butter or oil around the crust before baking. This will mimic what the egg wash does!
