How to make these vegan peppermint chocolate chunk cookie bars

Start by melting the vegan butter in the microwave. Next make the flax egg. Add the flax egg to a large bowl along with the peppermint and vanilla extract. Pour in the melted vegan butter and combine.

Next add the sugars, salt, baking powder, baking soda, crushed peppermint, flour, and chocolate chunks. Stir to combine.

Place the dough into your greased and parchment lined 8×8 pan. Press down to ensure the dough is evenly spread out. Bake for 25 minutes at 325°F! Top with more peppermint once out of the oven. Let cool, then cut into slices.
